Fragrant Rice infused with spices and aromatic ghee from Sarda Farms, Ghee Rice makes for a stunning festive dish. Quick and easy, this one pot dish can be made at short notice. Pair it with your favourite curry or dahi based salad (raita) for a scrumptious meal.

 1 cup long grain rice, washed
 4 tbsp rice
 2 onions, sliced lengthwise
 4 cloves
 5 black peppercorns
 1 star anise
 1 tejpatta
 2 tbsp Shahjeera (caraway seeds) or cumin seeds
 2 green chillies, slit lengthwise
 7 cashewnuts and 8-10 raisins for garnish (optional)
 Salt to taste
 Mint leaves for garnish

Method:

1. Heat 2 tablespoons ghee in a pan.

2. Add cashewnuts and raisins and fry for a few seconds. Remove with a slotted spoon and keep aside.

3. Add the onions, stir and fry on medium heat till they turn brown. ( about 8-10 minutes)

4. Reserve part of the browned for garnish.

5. Add remaining ghee to the pan.

6. Add shahjeera, peppercorns, cloves, star anise, tejpatta and chillies.

7. Stir in the rice and fry for a few seconds till the ghee coats the rice grains.

8. Add about 2 cups of water add salt. (Quantity of water may change depending on the variety of rice)

9. Bring it to a boil and cook covered till the rice grains soften. (about 12-15 minutes)

Serve hot garnished with reserved onions, cashewnuts, raisins and mint leaves.
